Sage leaves in tempura

For tempura:
-
100g of 00 flour
-
100 ml cold water
-
100ml cold tonic water
-
2 ice cubes

Sage leaves (Salvia officinalis)
Method:
Put the flour in a bowl and first add a couple of ice cubes and then add some tonic and cold water incorporating it into the flour. Heat the extravirgin olive oil in a non-too large non-stick pan. Oil temperature should always be 180° for a perfect tempura.
Dip the dry sage leaves into the batter, using a kitchen tweezers. Flip it carefully on each side and put on absorbent paper.
