N’dunderi with lemon

For the dough:

  • 175 g ricotta
  • 170g soft wheat flour type 1
  • 1 Lemon peel
  • 1 egg
  • Salt (q.s.)

Method:

Put everything in a bowl: ricotta, lemon zest, flour, egg and a pinch of salt. Mix up everything and work the dough until you get a homogeneous mixture. Kneed the dough and start to rolling until obtain long stubs then cut in two centimeters and let them rest for twenty minutes.

For stuffing:

  • 60g butter
  • 1 lemon
  • Basil

Method:

Melt the butter in a pan and grate the lemon to add the zest, then using the same lemon squeeze the juice. Cook on low heat. In the while ndunderi will boil in salted water for few minutes (ndunderi are ready when they float). Take ndunderi and put them directly in the lemon sauce. At the end add on the top basil or parsley.
